Instructions
Prepare the ingredients according to the list. It is better to use small porcini mushrooms.

Wash and clean the mushrooms. If the mushrooms are large, cut them into small pieces that are convenient to fit into jars.

Place the mushrooms in an enameled pot, cover with cold water, add salt (for blanching) and place over heat. When the water boils, reduce the heat to medium and cook the mushrooms for ≈15 minutes, skimming off the foam. Then drain the water.

Pour fresh water over the mushrooms again and cook for ≈15 minutes. Then drain the water and put the mushrooms in a colander so that the liquid drains completely.

Pour water into a pot, add sugar and salt. When the marinade comes to a boil, add bay leaf, cloves, peppercorns, and garlic cloves. Boil the marinade for ≈5 minutes.

Add the porcini mushrooms to the marinade and cook for another ≈5 minutes, then pour in the vinegar. Let the marinade come back to a boil and turn off the heat.

Wash the jars and lids with baking soda and sterilize them. Fill them with the hot mushrooms and cover with hot marinade up to the shoulders of the jars. Place the jars with mushrooms in a pot filled with hot water. Put a cotton cloth on the bottom of the pot.

Sterilize the jars from the moment the water boils in the pot: 0.5 l jars for 10-15 minutes; 1-1.5 l jars for 15-20 minutes; 2-3 l jars for 20-30 minutes. Seal the jars, turn them upside down and let the preserve cool at room temperature under a blanket.

Arrange the pickled porcini mushrooms in a glass or ceramic bowl, drizzle with sunflower oil, sprinkle with onion and dill and serve with boiled potatoes. Enjoy!
