Instructions
Prepare the slippery jacks: sort them, removing leaves and any debris. It is best to use small mushrooms that are not wormy.

Wash the mushrooms and dry them thoroughly. If you like, peel the brown skin off the caps.

Cut large mushrooms into 2–3 pieces and leave small ones whole. If freezing raw, put the mushrooms into lidded containers or freezer bags.

If freezing boiled mushrooms, bring water to the boil in a saucepan and salt it.

As soon as the water boils, add the mushrooms.

Simmer over low heat, skimming the foam constantly, for about 15 minutes until cooked.

Drain the mushrooms in a sieve, rinse with cold water and let them cool and drain completely.

Divide the mushrooms into lidded plastic containers or special freezer bags in single-dish portions: thawed mushrooms must not be refrozen.

Tie the bags and place them in the freezer. Freeze at −18…−20 °C, preferably in quick (turbo) freeze mode.

Thaw frozen mushrooms gradually: first in the fridge, then at room temperature.
